Prepare strawberries: Wash, hull, and slice strawberries. Set aside.

Cook filling: In a medium saucepan over medium heat, whisk together sugar, cornstarch, and water until smooth. Bring to a simmer, stirring constantly, until thickened (about 5 minutes).

Add gelatin: Remove from heat and stir in strawberry gelatin powder until dissolved.
