Description

This Crustless Fresh Strawberry Pie is a simple and refreshing dessert made with juicy strawberries suspended in a sweet, glossy filling. No crust, no fuss—just fresh flavor in every bite! It’s naturally gluten-free and perfect served chilled with whipped cream or a scoop of vanilla ice cream.

 


Ingredients

  • 4 cups fresh strawberries, hulled and halved

  • 3/4 cup granulated sugar

  • 2 tbsp cornstarch

  • 1/4 cup water

  • 1 (3 oz) box strawberry gelatin (like JELL-O)

 

  • Optional toppings: whipped cream, fresh mint leaves


Instructions

  • Prepare strawberries: Wash, hull, and slice strawberries. Set aside.

  • Cook filling: In a medium saucepan over medium heat, whisk together sugar, cornstarch, and water until smooth. Bring to a simmer, stirring constantly, until thickened (about 5 minutes).

  • Add gelatin: Remove from heat and stir in strawberry gelatin powder until dissolved.

  • Assemble pie: In a pie dish or serving bowl, layer the fresh strawberries. Pour the warm gelatin mixture evenly over the berries.

  • Chill: Refrigerate for at least 4 hours, or until set and firm.

 

  • Serve: Slice and serve chilled. Top with whipped cream if desired.
