Description

A simple and flavorful Crockpot Taco Casserole that combines seasoned ground beef or turkey with black beans, corn, and salsa, layered with tortilla chips and melted cheese. Perfect for a hands-off, crowd-pleasing meal ready in just a few hours.

Ingredients

Scale

Protein and Main Ingredients

  • 1 lb ground beef or turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained

Seasonings and Extras

  • 1 packet taco seasoning
  • 2 cups tortilla chips
  • 2 cups shredded cheese (cheddar or Mexican blend recommended)
  • 1 cup salsa

Instructions

  1. Brown the meat: Heat a skillet over medium-high heat and brown the ground beef or turkey until fully cooked, breaking it up with a spoon as it cooks. Drain any excess fat.
  2. Combine in crockpot: Transfer the browned meat to the crockpot. Add the drained black beans, corn, taco seasoning, and salsa, stirring everything together until well combined.
  3. Layer tortilla chips and cheese: Spread the tortilla chips evenly over the meat and bean mixture, then sprinkle the shredded cheese evenly on top.
  4. Cook: Cover and cook on low for 4 hours, allowing the flavors to meld and the cheese to melt into a delicious casserole.

Notes

  • For a lighter option, use ground turkey instead of beef.
  • Feel free to add chopped onions or bell peppers to the meat while browning for extra flavor.
  • Serve with sour cream, guacamole, or chopped cilantro for added toppings.
  • This dish can also be prepared in an oven-safe dish and baked at 350°F for about 30 minutes if you don’t have a crockpot.
  • Leftovers can be refrigerated for up to 3 days and reheated in the microwave or oven.
