Ingredients
Scale
Chicken and Seasoning
- 2 large boneless, skinless chicken breasts
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
Rice and Broth
- 1 cup long-grain white rice
- 2 cups chicken broth
Vegetables and Dairy
- 2 cups fresh or frozen broccoli florets
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream or milk
Instructions
- Prepare the Crockpot: Place the chicken breasts in the bottom of the Crockpot. Season them evenly with garlic powder, onion powder, paprika, salt, and pepper to infuse flavor.
- Add Rice and Broth: Sprinkle the rice over the seasoned chicken breasts. Pour the chicken broth on top, ensuring the rice is completely submerged to cook evenly.
- Cook: Cover the Crockpot and cook on low heat for 4-5 hours or on high for 2-3 hours until the chicken is fully cooked and the rice is tender.
- Shred the Chicken: Remove the chicken breasts from the Crockpot and shred them using two forks. Return the shredded chicken back into the Crockpot.
- Add Broccoli and Cheese: Stir in the broccoli florets, heavy cream (or milk), and shredded cheddar cheese until well combined for a creamy texture.
- Final Cooking: Cover and cook for another 20-30 minutes on high until the broccoli softens and the cheese melts completely.
- Serve: Stir everything thoroughly and serve warm. Optionally garnish with extra cheese for added flavor.
Notes
- You can use fresh or frozen broccoli based on availability; frozen broccoli can be added directly without thawing.
- For a lighter option, substitute heavy cream with milk or a dairy-free alternative.
- Adjust the seasoning to taste, adding more garlic or onion powder if desired.
- If you prefer, you can add other vegetables such as mushrooms or bell peppers for extra nutrition.
- Leftovers keep well in the refrigerator for up to 3 days and can be reheated gently in the microwave or stovetop.
