Ingredients
Scale
Chicken and Broccoli Mix
- 1 1/2 pounds boneless skinless chicken breasts, cut into chunks
- 4 cups broccoli florets (fresh or frozen)
Cheese Sauce
- 1 can (10.5 oz) condensed cream of chicken soup
- 1/2 cup chicken broth
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1 1/2 cups shredded cheddar cheese, divided
- 4 oz cream cheese, softened
Serving Option
- 2 cups cooked white rice (optional, for serving)
Instructions
- Combine Ingredients in Crockpot: Add the chunked chicken, broccoli florets, condensed cream of chicken soup, chicken broth, garlic powder, onion powder, and black pepper into the crockpot. Stir gently to mix all ingredients evenly.
- Cook Slow and Low: Cover the crockpot and cook on low heat for 4 to 5 hours, or alternatively on high heat for 2 to 3 hours. Cook until the chicken is fully cooked through and tender, and the broccoli is cooked to your liking.
- Add Cheeses: About 30 minutes before serving, add the softened cream cheese and 1 cup of shredded cheddar cheese to the crockpot. Stir well until combined and creamy. Cover again and continue cooking until the cheeses are fully melted and integrated into the mixture.
- Final Touch and Serve: Stir the cheesy chicken and broccoli mixture once more right before serving. Sprinkle the remaining 1/2 cup shredded cheddar cheese on top as a garnish. Serve the dish warm over cooked white rice, or cauliflower rice for a low-carb option if preferred.
Notes
- For a low-carb alternative, omit the white rice or substitute with cauliflower rice.
- If using frozen broccoli, add it at the beginning with the chicken for convenience. If using fresh broccoli, add it during the last hour of cooking to maintain a firmer texture.
