  • 4 cups low-sodium chicken broth
  • 1 (16-ounce) package potato gnocchi


Instructions

  1. Brown the Sausage: In a skillet over medium heat, add olive oil and cook the Italian sausage, breaking it up with a spoon until browned and cooked through. Drain any excess grease to avoid oily broth.
  2. Add Ingredients to Crock Pot: Transfer the browned sausage, diced onion, minced garlic, diced carrots, diced celery, dried basil, oregano, crushed red pepper flakes, salt, black pepper, canned diced tomatoes with juices, and chicken broth into the Crock Pot. Stir well to combine all ingredients evenly.
  3. Slow Cook the Soup: Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until vegetables are tender and flavors meld together beautifully.
  4. Add Gnocchi and Spinach: In the last 30 minutes of cooking, stir in the potato gnocchi and roughly chopped fresh spinach. Cover and continue cooking until gnocchi are tender and spinach has wilted perfectly.
