Description

Crispy Potato Skins are a classic appetizer made by baking potato halves until golden, then filling them with cheese, bacon, and green onions. Perfectly crunchy on the outside and cheesy on the inside, they’re ideal for parties or game day.


Ingredients

  • 4 medium russet potatoes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 2 green onions, sliced
  • Sour cream, for serving (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes and prick them with a fork. Bake for 45–60 minutes, or until tender.
  2. Let potatoes cool slightly, then cut in half lengthwise and scoop out most of the flesh, leaving a 1/4-inch shell.
  3. Brush the insides and outsides of the potato skins with olive oil and season with salt and pepper.
  4. Place skins cut side down on a baking sheet. Bake for 10 minutes, then flip and bake 10 more minutes until crispy.
  5. Fill each skin with shredded cheese and bacon. Return to oven and bake for 5–7 minutes until cheese is melted.
  6. Top with sliced green onions and serve warm with sour cream if desired.

Notes

  • Use the scooped-out potato flesh for mashed potatoes or another recipe.
  • Try swapping bacon for sautéed mushrooms or black beans for a vegetarian option.
  • Best served immediately, but can be prepped ahead and reheated in the oven.
