Crispy Fried Zucchini is a delicious appetizer or side dish made by coating zucchini slices in a seasoned breadcrumb mixture and frying them until golden brown. Crunchy on the outside and tender inside, they’re perfect for dipping or snacking.

- 2 medium zucchini, sliced into 1/4-inch rounds
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 tablespoon milk or water
- 1 cup breadcrumbs (regular or panko)
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil for frying
Instructions
- Set up a breading station with three shallow bowls: one with flour, one with beaten eggs and milk, and one with breadcrumbs, Parmesan, garlic powder, salt, and pepper mixed together.
- Dip each zucchini slice first in flour, then egg, then breadcrumb mixture, pressing to adhere.
- Heat 1/2 inch of oil in a large skillet over medium-high heat until hot (350°F/175°C).
- Fry zucchini in batches, 2–3 minutes per side, until golden brown and crisp.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve hot with marinara sauce, ranch, or your favorite dip.
Notes
- For extra crunch, use panko breadcrumbs.
- Try baking or air frying for a lighter version.
- Best enjoyed fresh, but can be reheated in the oven to crisp up.
