Ingredients
-
2 tbsp olive oil
-
1 lb boneless, skinless chicken breast (cut into bite-sized pieces)
-
Salt and pepper, to taste
-
3 cloves garlic, minced
-
1/2 tsp Italian seasoning
-
2 cups broccoli florets (fresh or frozen)
-
1 cup chicken broth
-
1 cup heavy cream
-
1/2 cup grated Parmesan cheese
-
1 package (20 oz) refrigerated cheese tortellini
-
Optional: extra Parmesan and red pepper flakes for topping
Instructions
-
Cook the chicken: In a large skillet over medium-high heat, heat olive oil. Season chicken with salt and pepper, then sauté for 5–6 minutes until golden and cooked through. Remove from skillet and set aside.
-
Sauté garlic and broccoli: In the same pan, add garlic and Italian seasoning. Sauté for 30 seconds until fragrant. Add broccoli and cook for 2–3 minutes (a bit longer if using fresh broccoli), stirring often.
-
Add liquids and pasta: Pour in chicken broth and heavy cream. Bring to a gentle simmer, then stir in tortellini. Cook for 5–6 minutes, stirring occasionally, until the tortellini is tender and sauce has thickened slightly.
-
Add chicken and cheese: Return the chicken to the skillet and stir in Parmesan cheese. Mix well and cook another 1–2 minutes until everything is hot and creamy.
-
Serve hot, topped with more Parmesan and red pepper flakes if desired
Notes
-
Use rotisserie chicken to save time.
-
You can substitute spinach or peas for broccoli if preferred.
-
Want it lighter? Use half-and-half or a mix of milk and cream.
