Pasta
- 12 oz of egg noodles
Chicken and Vegetables
- 3 chicken breasts, skinless and boneless, cut into chunks
- ½ cup of frozen mixed vegetables (12 oz)
- ½ onion, finely chopped
- 1 tablespoon garlic, finely minced
Seasonings and Sauces
- 2 tablespoons butter
- 1 teaspoon chicken bouillon powder
- ½ teaspoon paprika
- Salt and pepper, to taste
- 1 can (10.5 oz) cream of mushroom soup
- 1 can (10.5 oz) cream of chicken soup
- ½ cup milk
Instructions
- Cook the Noodles: Bring a large pot of water to boil and cook the egg noodles according to package instructions. Drain the noodles well and set aside.
- Sauté Onions: In a large pan over medium-high heat, melt the butter. Add the chopped onion and sauté for 2–3 minutes until fragrant and softened.
- Cook Chicken: Add the diced chicken to the pan. Season with paprika, chicken bouillon powder, salt, and pepper. Stir occasionally and cook until the chicken is nearly fully cooked through.
- Add Vegetables and Garlic: Add frozen mixed vegetables to the pan and continue cooking for about 5 minutes. Then add the minced garlic and stir for 30 seconds to release its aroma.
- Create Creamy Sauce: Reduce heat to medium. Pour in the cream of mushroom soup, cream of chicken soup, and milk. Stir well to combine until the sauce is smooth and creamy. Allow the mixture to warm through.
- Combine Noodles with Sauce: Add the cooked egg noodles into the pan, stirring thoroughly to coat the noodles evenly with the creamy chicken and vegetable sauce.
- Serve: Scoop the creamy chicken pasta into bowls and serve warm for a cozy, comforting meal.
Notes
- You can substitute frozen mixed vegetables with fresh vegetables like peas, carrots, and corn.
- Use low-sodium chicken bouillon to control the saltiness of the dish.
- For a richer flavor, use whole milk or substitute half the milk with cream.
- Adding a sprinkle of grated parmesan cheese on top when serving adds extra savory depth.
- This dish can be made ahead and gently reheated; add a splash of milk if the sauce thickens too much upon reheating.
