Scale
Main Ingredients
- 9 lasagna noodles
- 2 cups cooked chicken, shredded
- 1 1/2 cups ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cups Alfredo sauce
Seasonings
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) ensuring it’s ready for baking the lasagna rolls.
- Cook Noodles: Boil the lasagna noodles according to package directions until al dente. Drain and set aside to cool so they are easy to handle.
- Prepare Filling: In a mixing bowl, combine shredded chicken, ricotta cheese, 1/2 cup of shredded mozzarella, 1/4 cup grated Parmesan, garlic powder, Italian seasoning, salt, and pepper. Mix thoroughly until well combined.
- Assemble Rolls: Lay a cooked lasagna noodle flat and spread a generous amount of the chicken-cheese mixture evenly along its length. Carefully roll up the noodle and place it seam side down in a baking dish. Repeat this process with all noodles and filling.
- Add Sauce and Cheese: Pour the Alfredo sauce evenly over the rolled noodles in the dish. Sprinkle the remaining mozzarella and Parmesan cheeses on top for a golden, cheesy crust.
- Bake Covered: Cover the baking dish with aluminum foil and bake for 25 minutes, allowing the flavors to meld and the filling to heat through.
- Bake Uncovered: Remove the foil and continue baking for an additional 10 minutes, or until the cheese on top is bubbly and lightly browned.
- Garnish and Serve: Remove from oven, garnish with fresh parsley, and serve warm for a delicious, creamy meal.
Notes
- Use cooked chicken leftover from a rotisserie or poached chicken breasts for convenience.
- Ricotta cheese can be substituted with cottage cheese if desired.
- If Alfredo sauce is not available, you can use a homemade béchamel sauce with Parmesan added.
- For extra flavor, add sautéed spinach or mushrooms to the filling mixture.
- Cover tightly with foil during baking to prevent the rolls from drying out.
- Let the baked rolls rest for 5 minutes before serving to set the filling.
