Instructions
- Bring broth to boil: In a large stock pot, bring 6 cups of chicken broth (or water) to a rolling boil on the stove.

- Add ingredients for mashing: To the potatoes, add the reserved ½ cup chicken broth, ½ cup unsalted butter, 5.3 ounces of Boursin Garlic and Fine Herbs cheese, 1 teaspoon salt, and 1 teaspoon black pepper.
- Mash potatoes: Use a handheld potato masher or an electric hand mixer to thoroughly mash the potatoes until smooth and creamy, blending all ingredients evenly.
- Serve and garnish: Transfer the creamy mashed potatoes to a serving bowl and garnish with 1 tablespoon chopped fresh chives if desired. Serve warm.
