- 2 cups corn kernels (fresh, canned, or frozen and thawed)
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup chopped green onions
- 1/2 tsp garlic powder
- 1/4 tsp paprika
- Salt and pepper to taste
- 1 jalapeño, finely diced (optional, for heat)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish or oven-safe skillet.
- In a large bowl, mix together cream cheese, sour cream, cheddar, Monterey Jack, garlic powder, paprika, salt, and pepper until well combined.
- Stir in the corn, green onions, and jalapeño (if using).
- Transfer the mixture to the prepared dish and spread evenly.
- Bake for 20–25 minutes, or until hot and bubbly and the top is lightly golden.
- Garnish with extra green onions before serving. Serve warm with tortilla chips, crackers, or bread.
Notes
- Make it ahead and refrigerate—just bake when ready to serve.
- For a smoky flavor, use fire-roasted corn or add a pinch of smoked paprika.
- Easily make it spicy by adding hot sauce or more jalapeños.
