  • 1/2 cup barbecue sauce, plus more for topping

  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder

  • 3 cups prepared mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 2 green onions, sliced


Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C) to prepare for baking the casserole.
  2. Make Meatloaf Mixture: In a large bowl, combine the ground beef, seasoned breadcrumbs, 1/2 cup barbecue sauce, egg, salt, pepper, onion powder, and garlic powder. Mix gently until just combined to keep the meatloaf tender.
  3. Form Meatloaf Base: Press the meat mixture evenly into the bottom of a greased 9×9-inch baking dish. Spread a thin layer of barbecue sauce over the meatloaf base for added flavor and moisture.
