			Meatloaf
- 1 1/2 pounds ground beef
 - 1 cup seasoned breadcrumbs
 - 1/2 cup barbecue sauce, plus more for topping
 - 1 large egg
 - 1/2 teaspoon salt
 - 1/2 teaspoon black pepper
 - 1 teaspoon onion powder
 - 1 teaspoon garlic powder

Topping and Garnish
- 3 cups prepared mashed potatoes
 - 1 cup shredded cheddar cheese
 - 1/2 cup cooked and crumbled bacon
 - 2 green onions, sliced

Instructions
- Preheat Oven: Set your oven to 375°F (190°C) to prepare for baking the casserole.
 - Make Meatloaf Mixture: In a large bowl, combine the ground beef, seasoned breadcrumbs, 1/2 cup barbecue sauce, egg, salt, pepper, onion powder, and garlic powder. Mix gently until just combined to keep the meatloaf tender.
 - Form Meatloaf Base: Press the meat mixture evenly into the bottom of a greased 9×9-inch baking dish. Spread a thin layer of barbecue sauce over the meatloaf base for added flavor and moisture.
 - Bake Meatloaf Layer: Bake uncovered for 20 minutes to allow the meatloaf base to start cooking and firm up.
 - Add Toppings: Carefully remove the dish from the oven. Evenly spread the prepared mashed potatoes over the meatloaf layer, then sprinkle shredded cheddar cheese and crumbled bacon on top.
 - Finish Baking: Return the casserole to the oven and bake for another 15 to 20 minutes, or until the cheese is melted, bubbly, and slightly golden.
 - Garnish and Serve: Remove from oven and garnish with sliced green onions before serving to add freshness and a mild onion flavor.

Notes
- You can use leftover mashed potatoes or instant mashed potatoes to save time.
 - Swap the ground beef for ground turkey if you prefer a leaner option.
 - Add sautéed bell peppers or jalapeños into the meat mixture for extra flavor and a bit of heat.
