- 4 ears of corn, husked and cut into quarters (lengthwise)
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- 1 tablespoon fresh lime juice (optional, for garnish)
Instructions
- Preheat the grill to medium-high heat.
- Carefully cut the ears of corn into quarters lengthwise to create ‘corn ribs.’
- In a small bowl, mix olive oil, smoked paprika, garlic powder, chili powder, salt, and pepper to create the seasoning mixture.
- Brush the corn ribs with the seasoning mixture, making sure each piece is coated evenly.
- Place the corn ribs on the grill and cook for 6-8 minutes, turning occasionally, until the corn is tender and has grill marks.
- Remove the corn ribs from the grill and garnish with freshly chopped cilantro and a squeeze of lime juice for an extra burst of flavor.
- Serve as a fun side dish or appetizer at your next BBQ or summer meal.
Notes
- For a different flavor profile, try adding a sprinkle of cotija cheese or your favorite hot sauce to the corn ribs after grilling.
