Description

Crispy and flavorful corn ribs, made by cutting corn on the cob into rib-like pieces, then seasoned and grilled to perfection for a fun, plant-based BBQ side dish.


Ingredients

  • 4 ears of corn, husked and cut into quarters (lengthwise)
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • 1 tablespoon fresh lime juice (optional, for garnish)

Instructions

  1. Preheat the grill to medium-high heat.
  2. Carefully cut the ears of corn into quarters lengthwise to create ‘corn ribs.’
  3. In a small bowl, mix olive oil, smoked paprika, garlic powder, chili powder, salt, and pepper to create the seasoning mixture.
  4. Brush the corn ribs with the seasoning mixture, making sure each piece is coated evenly.
  5. Place the corn ribs on the grill and cook for 6-8 minutes, turning occasionally, until the corn is tender and has grill marks.
  6. Remove the corn ribs from the grill and garnish with freshly chopped cilantro and a squeeze of lime juice for an extra burst of flavor.
