- Separate Eggs: Carefully separate the egg whites from the yolks into two clean bowls, ensuring no yolk contaminates the whites for proper whipping.
- Beat Egg Whites: Add the cream of tartar to the egg whites and whisk with an electric mixer until stiff peaks form, indicating that they are well aerated.
- Mix Yolks and Cream Cheese: In the other bowl, whisk together the egg yolks, cream cheese, sugar (if using), and salt until the mixture is smooth and homogenous.
