Description

These Cinnamon Applesauce Muffins are moist, fluffy, and lightly sweet with just the right amount of spice. Applesauce keeps them tender without the need for a lot of oil or butter, making them a healthier option you can enjoy any time of day. Bonus: they smell amazing while baking!


Ingredients

1 1/2 cups all-purpose flour

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp ground nutmeg (optional)

1 cup unsweetened applesauce

1/3 cup vegetable oil (or melted coconut oil)

2 large eggs

1 tsp vanilla extract

Optional Topping:

1 tbsp granulated sugar

1/2 tsp ground cinnamon


Instructions

  • Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease lightly.

  • Mix dry ingredients: In a large bowl, whisk together flour, sugars, baking powder, baking soda, salt, cinnamon, and nutmeg.

  • Mix wet ingredients: In another bowl, whisk together applesauce, oil, eggs, and vanilla until smooth.

  • Combine: Pour the wet mixture into the dry ingredients and stir just until combined—don’t overmix.

  • Fill the muffin tin: Divide the batter evenly among the muffin cups (about 3/4 full).

  • Add topping (optional): In a small bowl, mix the sugar and cinnamon. Sprinkle over the muffin tops.

  • Bake for 18–22 minutes, or until a toothpick comes out clean.

 

  • Cool and enjoy: Let muffins cool in the pan for 5 minutes before transferring to a wire rack.


Notes

  • You can use whole wheat flour or a mix of flours for a fiber boost.

  • Stir in 1/2 cup of chopped nuts or raisins for extra texture.

  • Muffins freeze well—just reheat in the microwave for a quick snack.
