- 12 oz rotini pasta
- 1/2 cup fresh cilantro, chopped
- 1/4 cup fresh lime juice (about 2 limes)
- 2 tbsp olive oil
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels (fresh, canned or thawed from frozen)
- 1/2 red onion, diced
- 1 avocado, diced
- 1/2 cup crumbled feta or cotija cheese (optional)
Instructions
- Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
- In a large mixing bowl, whisk together lime juice, olive oil, garlic, salt, and pepper.
- Add the cooled pasta, chopped cilantro, cherry tomatoes, corn, and red onion to the bowl and toss to combine.
- Gently fold in the diced avocado and cheese (if using).
- Chill for at least 30 minutes before serving to allow flavors to meld.
- Garnish with extra cilantro and lime wedges if desired.
Notes
- Best served the same day, but can be refrigerated up to 2 days.
- For added protein, mix in grilled chicken or black beans.
- Adjust lime and salt to taste before serving.
