Description

A refreshing and zesty pasta salad loaded with fresh cilantro, lime juice, and vegetables—perfect for summer gatherings or a light lunch.


Ingredients

  • 12 oz rotini pasta
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 tbsp olive oil
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels (fresh, canned or thawed from frozen)
  • 1/2 red onion, diced
  • 1 avocado, diced
  • 1/2 cup crumbled feta or cotija cheese (optional)

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, whisk together lime juice, olive oil, garlic, salt, and pepper.
  3. Add the cooled pasta, chopped cilantro, cherry tomatoes, corn, and red onion to the bowl and toss to combine.
  4. Gently fold in the diced avocado and cheese (if using).
  5. Chill for at least 30 minutes before serving to allow flavors to meld.
  6. Garnish with extra cilantro and lime wedges if desired.

Notes

  • Best served the same day, but can be refrigerated up to 2 days.
