Scale
- 3 tablespoons unsalted butter
- 1 (10 oz) bag mini marshmallows
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon vanilla extract
- 5 cups Rice Krispies cereal
- 1/2 cup chocolate chips (optional, for extra chocolatey goodness)
Instructions
- In a large saucepan, melt the butter over low heat. Add the mini marshmallows and cocoa powder, stirring constantly until the marshmallows are completely melted and smooth.
- Remove the saucepan from heat and stir in the vanilla extract.
- Add the Rice Krispies cereal to the melted marshmallow mixture and stir gently until the cereal is fully coated with the chocolate mixture.
- If using chocolate chips, stir them in now while the mixture is still warm, allowing them to melt slightly and create a richer chocolate flavor.
- Lightly grease a 9×13-inch baking dish or line it with parchment paper. Transfer the mixture to the dish and press it down evenly with a spatula or your hands (be careful, as it may be hot).
- Allow the treats to cool at room temperature for about 30 minutes, or until set and firm.
- Once cooled, cut into squares or bars and serve. Store any leftovers in an airtight container for up to 3 days.
Notes
- If you prefer a sweeter treat, you can add a bit more chocolate chips or drizzle some melted chocolate on top once the treats are set.
- You can also experiment by adding other mix-ins like mini marshmallows, chopped nuts, or sprinkles for extra texture and flavor.
- For a richer, creamier texture, try using milk chocolate chips or a combination of milk and dark chocolate.
