Instructions
- Prepare the mixture: In a medium bowl, combine the peanut butter, soft butter, vanilla extract, and powdered sugar. Mix thoroughly until the mixture is smooth and creamy.
- Fold in cereal: Gently fold in the Rice Krispies cereal, being careful not to crush the cereal to maintain its crunch.
- Form balls: Using a tablespoon, scoop the mixture and roll it into small balls. Place the balls on a parchment-lined baking sheet.
- Chill the balls: Refrigerate the balls for 30 minutes so they firm up and hold their shape for coating.
- Melt the chocolate: In a microwave-safe bowl, melt the chocolate chips along with the optional coconut oil in 20-second intervals, stirring well between each interval until the chocolate is smooth and fully melted.
