Ingredients
1/2 cup unsalted butter (softened)
1/2 cup peanut butter (creamy or chunky)
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup cocoa powder (unsweetened)
1 cup semi-sweet chocolate chips (optional for extra chocolatey goodness)
Instructions
-
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
-
In a large bowl, cream together the softened butter, peanut butter, and granulated sugar until smooth and fluffy (about 2-3 minutes).
-
Beat in the egg and vanilla extract until well combined.
-
In a separate bowl, whisk together the flour, baking soda, salt, and cocoa powder.
-
Gradually add the dry ingredients to the wet ingredients, mixing until combined. The dough will be thick.
-
If desired, fold in the chocolate chips.
-
Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
-
Use a fork to gently press down on each cookie, creating a criss-cross pattern (optional).
-
Bake for 8-10 minutes, or until the edges are set and the cookies are slightly firm.
-
Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
-
For an even richer flavor, you can drizzle melted chocolate over the cooled cookies.
-
If you prefer a softer texture, take the cookies out closer to 8 minutes of baking time.
-
These cookies can be stored in an airtight container for up to 1 week.
