- 1 cup Guinness stout
- 1 cup unsalted butter
- 3/4 cup unsweetened cocoa powder
- 2 cups granulated sugar
- 3/4 cup sour cream
- 2 large eggs
- 1 tbsp vanilla extract
- 2 cups all-purpose flour
- 2 1/2 tsp baking soda
- For frosting: 8 oz cream cheese, softened
- 1 1/4 cups powdered sugar
- 1/2 cup heavy cream
Instructions
- Preheat oven to 350°F (175°C). Butter and line a 9-inch springform pan with parchment paper.
- In a saucepan, heat Guinness and butter over medium heat until butter melts. Remove from heat and whisk in cocoa and sugar.
- In a separate bowl, whisk together sour cream, eggs, and vanilla. Stir into Guinness mixture.
- Whisk in flour and baking soda until smooth.
- Pour batter into prepared pan and bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean.
- Cool completely in the pan on a wire rack.
- To make frosting, beat cream cheese and powdered sugar until smooth. Add cream and beat until fluffy.
- Spread frosting on the cooled cake, mimicking the frothy head of a pint of Guinness.
