Delicious and healthy Chocolate Fruit and Nut Bars made with melted semi-sweet chocolate chips, a variety of nuts, dried fruits, and seeds. These no-bake bars are perfect for a quick snack or an energy boost, combining rich chocolate flavor with the crunch of almonds and walnuts plus the sweetness of dried cranberries, raisins, and apricots.

Ingredients

Scale

Chocolate Mixture

  • 2 cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil or butter
  • 1 teaspoon vanilla extract
  • Pinch of salt

Nuts and Fruits

  • ½ cup chopped almonds
  • ½ cup chopped walnuts
  • â…“ cup dried cranberries
  • â…“ cup raisins
  • â…“ cup chopped dried apricots
  • ¼ cup pumpkin seeds or sunflower seeds

Instructions

  1. Melt Chocolate: In a heatproof bowl, melt the chocolate chips and coconut oil together using a microwave in 30-second intervals or over a double boiler, stirring until smooth.
  2. Add Flavorings: Stir in the vanilla extract and a pinch of salt into the melted chocolate until fully incorporated.
  3. Combine Nuts and Fruits: Add the chopped almonds, walnuts, dried cranberries, raisins, apricots, and seeds to the melted chocolate. Mix thoroughly until all the ingredients are evenly coated with chocolate.
  4. Prepare Pan: Line an 8×8-inch baking dish with parchment paper to prevent sticking.
  5. Set Bars: Pour the chocolate mixture into the prepared pan, spread evenly, and gently press down with a spatula to compact the mixture.
  6. Chill: Refrigerate the pan for at least 2 hours or until the bars are firm and set.
  7. Cut and Serve: Once set, lift the mixture out using the parchment paper, cut into 12 bars, and serve.
