Description
Chinese Beef and Eggs is a quick and flavorful stir-fry dish combining tender marinated beef with fluffy scrambled eggs, garnished with fresh green onions for an authentic Asian touch. Perfect for a satisfying main course served with steamed rice or noodles.
Ingredients
Scale
Beef Marinade
- 1/2 pound flank steak or sirloin, thinly sliced against the grain
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon cornstarch
- 1 teaspoon sesame oil
- 1/2 teaspoon sugar
Cooking
- 1 tablespoon vegetable oil (for cooking, divided)
- 4 large eggs
- 2 tablespoons milk or water
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
Instructions
- Marinate the Beef: In a medium bowl, combine the thinly sliced beef with soy sauce, oyster sauce, cornstarch, sesame oil, and sugar. Toss everything together to coat the beef evenly and let it marinate for at least 15 minutes to absorb the flavors.
- Prepare the Eggs: In another bowl, whisk the eggs with milk or water along with a pinch of salt and pepper. This will make the scrambled eggs tender and slightly creamy.
- Cook the Eggs: Heat half a tablespoon of vegetable oil in a nonstick skillet or wok over medium-high heat. Pour in the beaten eggs and scramble gently until they are just set but still soft. Remove the eggs from the pan and set aside to keep warm.
- Cook the Beef: Add the remaining half tablespoon of oil to the same skillet. Add the marinated beef and stir-fry for 2 to 3 minutes, or until the beef is browned and cooked through but still tender.
- Combine and Finish: Reduce heat to medium-low. Return the scrambled eggs to the skillet with the beef. Stir gently to combine and heat through for about one more minute.
- Garnish and Serve: Sprinkle the sliced green onions over the dish and serve hot. This pairs wonderfully with steamed rice or noodles for a complete meal.
Notes
- This dish closely resembles a Chinese stir-fry omelet and is quick to prepare.
- You can enhance the flavor by adding cooked onions or bell peppers into the stir-fry.
- Be careful not to overcook the eggs; they should remain tender and soft.
- Thinly slicing the beef against the grain ensures tenderness.
- Adjust soy and oyster sauce levels to suit your taste or dietary requirements.
