Ingredients
Scale
Main Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 1 tablespoon minced garlic
- 1 tablespoon chili powder
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon onion powder
- ½ teaspoon ground cumin
- 1 (15.5 oz) can chili beans, undrained
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 ½ cups beef broth
- 1 (8 oz) can tomato sauce
- 1 cup long-grain white rice, rinsed
- 1 ½ cups shredded cheddar cheese
Optional Toppings
- Jalapeños
- Sour cream
- Hot sauce
Instructions
- Brown Beef and Season: In a large skillet over medium-high heat, add the ground beef and chopped onion. Cook until the beef is browned and the onions are softened. Season with salt, black pepper, paprika, chili powder, onion powder, and cumin. Once cooked, drain any excess grease from the skillet.
- Add Remaining Ingredients: Stir in the minced garlic, undrained diced tomatoes, chili beans, beef broth, tomato sauce, and the rinsed long-grain white rice. Mix everything thoroughly to combine.
- Simmer: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to medium-low, cover the skillet with a lid, and let it simmer gently for about 20 minutes, or until the rice is fully cooked and has absorbed the liquids.
- Melt Cheese: After the rice is cooked, sprinkle the shredded cheddar cheese evenly over the top of the dish. To melt the cheese, you can either place the skillet briefly in a preheated oven or cover the skillet and allow it to sit on the stovetop until the cheese is melted and gooey.
- Serve: Serve the chili rice skillet hot, topped with optional jalapeños, sour cream, and hot sauce according to your preference for added flavor and spice.
Notes
- Make sure to rinse the rice before cooking to remove excess starch and prevent it from becoming too sticky.
- You can substitute ground turkey or chicken for the ground beef for a leaner option.
- For a spicier dish, add diced jalapeños during cooking or increase chili powder.
- If you don’t have a lid for your skillet, use aluminum foil to cover it while simmering.
- Leftovers keep well in the refrigerator for up to 3 days and can be reheated on the stovetop or microwave.
