Ingredients

Scale

Protein

  • 1 1/2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces

Vegetables

  • 2 cups fresh mushrooms, sliced
  • 3 cups fresh spinach

Dairy & Fats

  • 1 tablespoon olive oil
  • 1/2 cup cream cheese, softened
  • 1/4 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Spices & Seasonings

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
  2. Cook Chicken: In a large skillet over medium heat, warm olive oil. Add chicken pieces and season with garlic powder, salt, and pepper. Cook for 5 to 7 minutes until the chicken is mostly cooked through and starting to brown.
  3. Add Mushrooms and Spinach: Add the sliced mushrooms to the skillet and cook for another 3 to 4 minutes until softened. Next, stir in the fresh spinach and cook until wilted, combining all ingredients evenly.
  4. Prepare Creamy Sauce: In a small bowl, mix the softened cream cheese, heavy cream, onion powder, and dried thyme until smooth and creamy. Pour this mixture into the skillet, stirring thoroughly until all the chicken, mushrooms, and spinach are coated with the sauce.
  5. Assemble and Bake: Transfer the creamy mixture into the prepared baking dish. Evenly sprinkle shredded mozzarella and grated Parmesan cheese on top.
  6. Bake: Place the dish in the oven and bake uncovered for 15 to 20 minutes until the casserole is bubbly and the cheese on top is golden and slightly crisp.
  7. Rest and Serve: Remove the dish from the oven and let it rest for 5 minutes to allow flavors to settle before serving.

Notes

  • You can substitute kale for spinach for a different leafy green texture.
  • Add chopped sun-dried tomatoes for an extra burst of flavor and color.
  • For added richness and a crunchy topping, sprinkle crushed pork rinds or almond flour over the cheese before baking.
