Description

This classic Chicken Spaghetti recipe is a comforting and easy-to-make casserole featuring tender shredded chicken, cheesy spaghetti, and a flavorful blend of cream of mushroom and chicken soups. Perfect for a family dinner, this baked pasta dish combines creamy, savory, and slightly spicy elements for a deliciously satisfying meal.

Ingredients

Scale

Chicken and Pasta

  • 2 cups cooked chicken, shredded or chopped
  • 8 ounces spaghetti noodles, broken in half

Sauce and Flavorings

  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 can (10 ounces) diced tomatoes with green chilies, drained (like Rotel)
  • 1 cup chicken broth
  • 1/2 cup chopped onion
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Cheese

  • 2 cups shredded cheddar cheese, divided

Instructions

  1. Preheat Oven: Preheat your oven to 350°F to prepare for baking the casserole.
  2. Cook Spaghetti: Cook the spaghetti noodles according to package directions until al dente. Drain well and set aside to cool slightly.
  3. Sauté Onions: In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for 3–4 minutes until soft and translucent.
  4. Prepare Mixture: In a large mixing bowl, combine the cooked chicken, cream of mushroom soup, cream of chicken soup, drained diced tomatoes with green chilies, chicken broth, 1 cup of shredded cheddar cheese, sautéed onions, garlic powder, salt, and black pepper. Stir until well blended.
  5. Combine with Pasta: Add the cooked spaghetti noodles to the bowl and mix until all ingredients are thoroughly combined and coated.
  6. Assemble in Baking Dish: Grease a 9×13-inch baking dish and pour in the spaghetti mixture. Spread evenly and then sprinkle the remaining 1 cup of cheddar cheese over the top.
  7. Bake: Bake uncovered in the preheated oven for 25–30 minutes, or until the cheese is melted, bubbly, and golden in spots.
  8. Rest and Serve: Remove from the oven and let the casserole rest for 5 minutes before serving to allow it to set.

Notes

  • Use rotisserie chicken for a quick and convenient option.
  • Substitute store-bought cream soups with homemade versions to reduce preservatives.
  • Add diced bell peppers or mushrooms for extra vegetables and texture.
