Description

  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese (for topping)
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 3 tablespoons olive oil
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish.
  2. Pound the chicken breasts to an even thickness using a meat mallet.
  3. Season the flour with salt, pepper, and garlic powder. Dredge each chicken breast first in the flour, then in the beaten eggs, and finally in a mixture of breadcrumbs and 1/2 cup Parmesan cheese.
  4. In a large skillet, heat olive oil over medium heat. Cook the chicken breasts for 2-3 minutes per side, until golden brown (they do not need to be fully cooked through).
  5. Place the browned chicken breasts in the prepared baking dish. Spoon marinara sauce over each piece, then top with shredded mozzarella and a sprinkle of Parmesan cheese.
  6. Bake uncovered for 20-25 minutes, until the cheese is melted and bubbly and the chicken reaches an internal temperature of 165°F (74°C).
  7. Garnish with fresh basil before serving, if desired.

  • For an even crispier result, bake the breaded chicken for 5-7 minutes before adding sauce and cheese.
