Ingredients
Scale
Chicken
- 2 boneless skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
Sandwich Fillings
- 1 avocado, sliced
- 4 slices of cheese (Swiss, cheddar, or provolone)
- 1 small red onion, thinly sliced
- 1 tomato, sliced
Bread and Condiments
- 4 slices of bread (sourdough, ciabatta, or your choice)
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- Butter or olive oil for grilling
Instructions
- Prepare the Chicken: Season both sides of the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook the chicken breasts for 6-7 minutes on each side until fully cooked and no longer pink in the center. Remove from heat and let rest for a few minutes before slicing thinly.
- Prepare the Avocado and Cheese: Slice the avocado and have the cheese slices ready. Set aside for assembly.
- Prepare the Bread: Spread a thin layer of mayonnaise and Dijon mustard on each slice of bread to impart flavor and moisture.
- Assemble the Sandwiches: On two slices of bread, layer the sliced chicken, avocado, and cheese. Add thin slices of red onion and tomato on top. Cover with the remaining slices of bread, ensuring the mayo side is down.
- Grill the Sandwiches: Heat a skillet or grill pan over medium heat and add butter or olive oil. Place the sandwiches on the skillet and cook for 3-4 minutes per side until the bread is golden brown and the cheese is melted. Press gently with a spatula to help the cheese melt evenly.
- Serve: Remove the sandwiches from the skillet and let them cool for a minute. Slice in half and serve warm for the best taste experience.
Notes
- You can substitute the chicken breasts with pre-cooked rotisserie chicken for a quicker version.
- Try different cheese varieties like mozzarella or pepper jack for varying flavors.
- Use gluten-free bread to make this sandwich suitable for gluten-sensitive diets.
- To add more veggies, include spinach or lettuce leaves.
- Leftover sandwiches can be wrapped and refrigerated but are best enjoyed fresh.
