Description

This Chicken Avocado Caprese Salad is a hearty, healthy, and flavor-packed salad made with juicy grilled chicken, creamy avocado, ripe tomatoes, fresh mozzarella, and basil. Drizzled with a simple balsamic glaze, it’s the perfect light meal for any time of year!

 


Ingredients

  • 2 boneless, skinless chicken breasts

  • 1 tbsp olive oil

  • 1/2 tsp garlic powder

  • Salt and pepper, to taste

  • 2 cups cherry tomatoes, halved

  • 1 avocado, sliced

  • 8 oz fresh mozzarella balls (or 1 large mozzarella ball, sliced)

  • 1/4 cup fresh basil leaves

  • 1-2 tbsp balsamic glaze (store-bought or homemade)

  • Optional: extra olive oil and lemon juice for drizzling


Instructions

  • Cook the chicken:
    Season chicken with garlic powder, salt, and pepper. Heat olive oil in a skillet or grill pan over medium heat. Cook chicken for 5–6 minutes per side, or until golden and cooked through (internal temp 165°F/74°C). Let rest, then slice.

  • Assemble the salad:
    In a large bowl or platter, layer the sliced chicken, cherry tomatoes, avocado slices, mozzarella, and fresh basil.

  • Dress the salad:
    Drizzle with balsamic glaze and a bit of olive oil or lemon juice if desired. Season with extra salt and pepper to taste.

 

  • Serve:
    Serve immediately while the chicken is still warm, or chill everything for a cold salad.


Notes

  • Make it low-carb by skipping the glaze and adding a splash of vinegar and oil.

  • Great with grilled shrimp or tofu as a variation.

  • Can be meal prepped – just slice avocado right before serving to avoid browning.
