Description
A comforting stovetop recipe featuring tender seared chicken breasts smothered in a rich, creamy garlic onion gravy, perfect for serving over instant mashed potatoes or your favorite side.
Ingredients
Scale
Chicken
- 2 chicken breasts, split lengthwise into thinner pieces
- Kosher salt and black pepper, to taste
- 1 tablespoon olive oil
Gravy
- 3 tablespoons butter
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 4 tablespoons all-purpose flour
- 2 cups chicken stock
- 1 tablespoon chicken base
- ¼ cup heavy cream
Serving
- Instant mashed potatoes, for serving
Instructions
- Sear the Chicken: Season the chicken breasts thoroughly with kosher salt and black pepper. Heat the olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and sear them for about 4 to 5 minutes on each side until they develop a golden brown crust. Remove the chicken from the skillet and set aside to rest.
- Prepare the Gravy: In the same skillet, reduce the heat to medium and melt the butter. Stir in the garlic powder and onion powder to infuse the butter with flavor. Gradually add the all-purpose flour while whisking continuously to create a smooth roux. Slowly pour in the chicken stock and chicken base, whisking constantly to prevent any lumps. Let the mixture simmer for 3 to 4 minutes, stirring occasionally, until the gravy thickens. Stir in the heavy cream and season with additional salt and pepper according to your taste.
- Combine & Serve: Return the seared chicken breasts to the skillet, coating them thoroughly with the creamy gravy. Allow the chicken to simmer gently for 5 to 7 minutes so it cooks through and absorbs the flavors of the sauce. Serve the chicken hot over a bed of instant mashed potatoes, rice, or biscuits for a hearty and satisfying meal.
Notes
- For extra flavor, you can marinate the chicken breasts with a little garlic powder and onion powder before searing.
- If you prefer a thicker gravy, continue simmering a little longer or add a slurry of flour and water.
- Instant mashed potatoes can be substituted with homemade mashed potatoes or other starches depending on your preference.
- Make sure not to overcrowd the pan when searing to ensure a nice golden crust.
