Description

Chewy Coconut Cookies are soft, golden treats loaded with sweet shredded coconut and a hint of vanilla. These simple cookies are perfect for coconut lovers and make a delicious addition to any dessert spread.


Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups sweetened shredded coconut

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet ingredients, mixing just until combined.
  5. Fold in the shredded coconut.
  6. Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing about 2 inches apart.
  7. Bake for 10–12 minutes, or until edges are golden and centers are set.
  8. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use sweetened shredded coconut for best texture and flavor.
  • Cookies will appear soft when removed from the oven but firm up as they cool.
