These Cheesy Ranch Oven Roasted Potatoes are crispy on the outside, tender on the inside, and packed with bold ranch flavor. Topped with melty cheddar cheese, they make the perfect easy side dish for any meal — from weeknight dinners to backyard BBQs.
Ingredients

2 lbs baby potatoes (halved or quartered if large)

2 tbsp olive oil

1 packet ranch seasoning mix (1 oz)

1/2 tsp garlic powder

1/4 tsp black pepper

1 1/2 cups shredded cheddar cheese

2 tbsp chopped fresh parsley (optional, for garnish)
Instructions

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

Season the potatoes: In a large bowl, toss potatoes with olive oil, ranch seasoning, garlic powder, and pepper until evenly coated.

Roast: Spread potatoes in a single layer on the baking sheet. Roast for 25–30 minutes, stirring halfway through, until golden and crispy.

Add cheese: Sprinkle shredded cheddar over the hot potatoes and return to the oven for 3–5 minutes, or until cheese is melted.

Serve: Garnish with chopped parsley if desired. Serve warm.
Notes
Use red potatoes, Yukon gold, or russets — whatever you have works!
Add a pinch of paprika or cayenne for a little heat.
These are great with sour cream or ranch dressing on the side for dipping.
