Ingredients
Scale
Wraps
- 2 large tortillas (regular or low-carb/high-protein)
Chicken Filling
- 7 oz cooked chicken, chopped (about 200 grams; rotisserie chicken recommended)
- 2 garlic cloves, minced or grated (adjust to taste)
- 2 tablespoons light mayonnaise
- 1 tablespoon light Greek yogurt or plain yogurt
- 2 teaspoons hot sauce (such as Frank’s)
- ¼ teaspoon salt
Cheese and Garnish
- 3 oz grated cheese (about 90 grams; cheddar blend preferred)
- 1 green onion, chopped
Cooking
- Olive oil spray
Instructions
- Mix chicken filling: In a bowl, combine the chopped cooked chicken, minced garlic, light mayonnaise, Greek yogurt, hot sauce, and salt. Stir well to create a flavorful, creamy chicken mixture.
- Lay out wrap: Place one tortilla flat on a clean surface. On the lower third of the tortilla, evenly sprinkle about 2 tablespoons of grated cheese.
- Add chicken mixture: Spoon approximately two-thirds of a cup of the chicken filling on top of the cheese layer. Then add another tablespoon of grated cheese and a sprinkle of chopped green onions.
- Fold wrap: Fold in the sides of the tortilla to enclose the filling, then carefully roll it up tightly from the bottom to form a secure wrap.
- Prepare pan: Heat a non-stick skillet over medium-high heat and lightly spray it with olive oil to prevent sticking and add crispness.
- Cook wraps: Place the wrap seam-side down in the hot pan. Cook for 3 to 4 minutes on each side until the wrap is golden brown and crispy. Cover the pan with a lid while cooking to help heat the inside thoroughly, melting the cheese and warming the filling.
- Slice and serve: Once cooked, remove the wrap from the pan. Slice it in half diagonally and serve immediately while warm and melty.
Notes
- You can use store-bought rotisserie chicken for convenience.
- Adjust garlic quantity according to your taste preference.
- For extra spice, add more hot sauce or a pinch of cayenne pepper to the chicken mixture.
- Try different cheese types such as mozzarella or pepper jack for varied flavor.
- Light olive oil spray minimizes added fat but helps achieve a crispy exterior.
- Serve with a side salad or fresh veggies for a balanced meal.
