Description

Cheesy Garlic Chicken Wraps are a quick and delicious meal featuring tender cooked chicken blended with garlic, creamy light mayonnaise and Greek yogurt, a hint of hot sauce, and melted cheddar cheese all wrapped in a warm tortilla. Perfectly pan-toasted for a crispy golden finish, these wraps make a satisfying lunch or dinner for two.

Ingredients

Scale

Wraps

  • 2 large tortillas (regular or low-carb/high-protein)

Chicken Filling

  • 7 oz cooked chicken, chopped (about 200 grams; rotisserie chicken recommended)
  • 2 garlic cloves, minced or grated (adjust to taste)
  • 2 tablespoons light mayonnaise
  • 1 tablespoon light Greek yogurt or plain yogurt
  • 2 teaspoons hot sauce (such as Frank’s)
  • ¼ teaspoon salt

Cheese and Garnish

  • 3 oz grated cheese (about 90 grams; cheddar blend preferred)
  • 1 green onion, chopped

Cooking

  • Olive oil spray

Instructions

  1. Mix chicken filling: In a bowl, combine the chopped cooked chicken, minced garlic, light mayonnaise, Greek yogurt, hot sauce, and salt. Stir well to create a flavorful, creamy chicken mixture.
  2. Lay out wrap: Place one tortilla flat on a clean surface. On the lower third of the tortilla, evenly sprinkle about 2 tablespoons of grated cheese.
  3. Add chicken mixture: Spoon approximately two-thirds of a cup of the chicken filling on top of the cheese layer. Then add another tablespoon of grated cheese and a sprinkle of chopped green onions.
  4. Fold wrap: Fold in the sides of the tortilla to enclose the filling, then carefully roll it up tightly from the bottom to form a secure wrap.
  5. Prepare pan: Heat a non-stick skillet over medium-high heat and lightly spray it with olive oil to prevent sticking and add crispness.
  6. Cook wraps: Place the wrap seam-side down in the hot pan. Cook for 3 to 4 minutes on each side until the wrap is golden brown and crispy. Cover the pan with a lid while cooking to help heat the inside thoroughly, melting the cheese and warming the filling.
  7. Slice and serve: Once cooked, remove the wrap from the pan. Slice it in half diagonally and serve immediately while warm and melty.

Notes

  • You can use store-bought rotisserie chicken for convenience.
  • Adjust garlic quantity according to your taste preference.
  • For extra spice, add more hot sauce or a pinch of cayenne pepper to the chicken mixture.
  • Try different cheese types such as mozzarella or pepper jack for varied flavor.
  • Light olive oil spray minimizes added fat but helps achieve a crispy exterior.
  • Serve with a side salad or fresh veggies for a balanced meal.
