- ¾ cup + 2 tablespoons shredded cheddar cheese (divided; ½ cup for biscuits, ¼ cup for casserole, 2 tablespoons for garnish)
- ¼ cup shredded pepper jack cheese (divided)
- 1 tablespoon reserved green onions (for biscuit dough)

Instructions
- Preheat and Prep: Preheat the oven to 375°F. Spray an 8×10-inch baking dish with cooking spray and set aside. Line a large baking sheet with parchment paper for subsequent biscuit preparation and set aside.
- Cook Sausage: Brown the sausage in a non-stick skillet over medium heat. Let it cook until golden brown on one side before breaking it up and stirring. Add ½ teaspoon paprika, garlic powder, onion powder, Kosher salt, and black pepper; stir well to combine. Remove sausage with a slotted spoon and drain on paper towels.
- Sauté Aromatics: In the same skillet, add chopped green onions and sweet peppers. Cook over medium heat until softened, about 2 to 3 minutes. Reduce heat if necessary to avoid burning.
- Combine Sausage and Vegetables: Mix the sautéed vegetables with the cooked sausage, then transfer the mixture evenly into the prepared baking dish. Sprinkle ¼ cup of combined shredded cheddar and pepper jack cheeses evenly over the mixture.
- Whisk Eggs and Pour: In a bowl, whisk the eggs thoroughly and pour evenly over the sausage-vegetable mixture, ensuring it fills all spaces. Top with the remaining shredded cheeses.
- Bake Casserole Base: Bake in the preheated oven at 375°F for 12-14 minutes until the egg mixture is mostly set but not completely firm.
- Prepare Biscuit Dough: While casserole bakes, prepare the Cheddar Bay biscuit dough as per package instructions, using cold water, ½ cup shredded cheddar cheese, and 1 tablespoon reserved green onions. Dissolve the herb seasoning packet into melted butter and keep it ready for brushing.
- Add Biscuit Topping: Remove casserole from oven and increase oven temperature to 425°F. Using a small cookie scoop, drop 12 equal portions of biscuit dough atop the semi-baked casserole. Note that the egg mixture beneath will still be somewhat soft.
