Scale
Corn and Prep
- 4 ears fresh corn (husks removed)
- 1 tablespoon olive oil
Crema Mixture
- 1/4 cup mayonnaise
- 2 tablespoons sour cream
- 1/2 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Juice of 1 lime
Toppings and Seasoning
- 1/3 cup crumbled cotija or feta cheese
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Preheat Grill: Preheat a grill or grill pan over medium-high heat to ensure it is hot enough to char the corn evenly.
- Prepare Corn: Brush the corn ears with olive oil to prevent sticking and enhance charring.
- Grill Corn: Place the corn directly on the grill, turning occasionally until the kernels are tender and have charred spots, about 8 to 10 minutes.
- Make Cream Sauce: While the corn cools slightly, mix together mayonnaise, sour cream, chili powder, smoked paprika, and lime juice in a bowl until smooth and well combined.
- Slice Kernels: Carefully slice the grilled corn kernels off the cobs with a sharp knife into a large bowl.
- Toss Corn: Add the creamy sauce to the corn kernels and toss thoroughly until the corn is evenly coated.
- Add Cheese and Cilantro: Stir in the crumbled cotija or feta cheese and chopped cilantro to infuse fresh flavor.
- Season and Serve: Season with salt and pepper to taste and serve warm or at room temperature as a delicious side dish or topping.
Notes
- To save time, frozen corn can be sautéed in a hot skillet until lightly charred instead of grilling.
- For extra heat, add diced jalapeño or a pinch of cayenne pepper to the mayo mixture.
