Ingredients

  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cucumber, sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons capers (optional)
  • 1/4 cup chopped fresh dill
  • Juice of 1 lemon
  • 2 tablespoons olive oil (for dressing)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey

Instructions

  1. Preheat oven to 400°F (200°C). Place salmon on a baking sheet, drizzle with 1 tablespoon olive oil, and season with salt and pepper.
  2. Roast for 12–15 minutes or until cooked through and flaky. Let cool slightly, then flake into large chunks.
  3. In a small bowl, whisk together lemon juice, 2 tablespoons olive oil, Dijon mustard, honey, and fresh dill to make the dressing.
  4. In a large bowl, combine salad greens, cherry tomatoes, red onion, cucumber, and capers (if using).
  5. Add flaked salmon and feta cheese on top.
  6. Drizzle with dressing and toss gently to combine. Serve immediately.
