Description

These Carrot Cake Bliss Balls are a nutritious and delicious no-bake snack that captures the warm flavors of classic carrot cake. Made with wholesome ingredients like rolled oats, shredded coconut, walnuts, grated carrots, and naturally sweetened with maple syrup and raisins, these bliss balls are perfect for a healthy treat or on-the-go snack. They come together quickly and require minimal prep, making them ideal for busy days when you want something tasty but nutritious.

Ingredients

Scale

Dry Ingredients

  • 1 cup rolled oats
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup walnuts (or pecans), chopped
  • 1 cup grated carrots (about 2 medium carrots)
  • 1/4 cup raisins (optional, for extra sweetness)

Wet Ingredients

  • 1/4 cup almond butter (or any nut butter of choice)
  • 2 tbsp maple syrup or honey
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp vanilla extract
  • Pinch of salt
  • Optional: 2-3 tbsp water (to help with consistency, if needed)

Instructions

  1. Prepare the Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, chopped walnuts, and grated carrots. If you’re adding raisins, mix them in as well.
  2. Add the Wet Ingredients: In a separate bowl, whisk together the almond butter, maple syrup (or honey), vanilla extract, cinnamon, nutmeg, ginger, and a pinch of salt.
  3. Combine the Mixtures: Pour the wet mixture into the dry ingredients and stir until everything is well combined. If the mixture seems too dry, add 1-2 tablespoons of water until the dough sticks together when pressed.
  4. Form the Bliss Balls: Roll the mixture into tablespoon-sized balls using your hands. Press and compact them tightly to ensure they hold their shape.
  5. Chill and Set: Place the bliss balls on a parchment-lined baking sheet or plate. Refrigerate for at least 30 minutes to allow them to firm up.
  6. Serve and Enjoy: Once chilled, serve immediately or store in an airtight container in the refrigerator for up to one week.

Notes

  • Raisins are optional but add natural sweetness and texture.
  • If the mixture is too sticky, refrigerate for a short time before rolling into balls.
  • For variation, substitute walnuts with pecans or other nuts you prefer.
  • These bliss balls can be stored refrigerated for up to one week or frozen for longer storage.
  • Try rolling the balls in extra shredded coconut for a decorative touch.
