- 2 pounds flank or skirt steak
- 1/3 cup olive oil
- 1/3 cup soy sauce
- 1/4 cup lime juice (about 2 limes)
- 1/4 cup orange juice
- 4 cloves garlic, minced
- 1 jalapeño, seeded and minced
- 1/2 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
Instructions
- In a bowl or large resealable bag, combine olive oil, soy sauce, lime juice, orange juice, garlic, jalapeño, cilantro, cumin, chili powder, paprika, salt, and pepper.
- Add the steak and marinate in the refrigerator for at least 2 hours or overnight for best flavor.
- Preheat grill or grill pan over high heat.
- Remove steak from marinade and let excess drip off. Grill for 5-7 minutes per side or until desired doneness is reached.
- Transfer to a cutting board and let rest for 5 minutes before slicing thinly against the grain.
- Serve with warm tortillas, salsa, guacamole, or your favorite sides.
Notes
- Skirt steak has more fat and flavor, while flank steak is leaner—both work well.
- Don’t skip the resting period before slicing to keep the steak juicy.
- Can be cooked under a broiler if a grill is not available.
