Scale
- 1 1/2 pounds ripe plums, pitted and quartered
- 1 1/2 cups water
- 1 to 1 1/2 cups granulated sugar, to taste
- 4–5 cardamom pods, lightly crushed or 1 teaspoon ground cardamom
- 2 tablespoons fresh lemon juice
Instructions
- Combine water, sugar, and cardamom in a saucepan. Bring to a boil, then simmer for 5 minutes to infuse. Cool slightly and strain if using whole pods.
- Blend the plums into a smooth puree. For a smoother texture, strain the puree through a fine mesh sieve.
- Mix the plum puree with the cardamom syrup and lemon juice. Chill the mixture in the refrigerator for 2–3 hours.
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- Transfer the sorbet to a container and freeze for an additional 2–3 hours or until firm.
Notes
- Adjust sugar based on the sweetness of your plums.
- Straining the plum puree removes skins and yields a smoother sorbet.
- For stronger cardamom flavor, steep longer or use ground cardamom directly.
