Description

A refreshing and exotic frozen dessert combining the tart sweetness of plums with the warm spice of cardamom.


Ingredients

  • 1 1/2 pounds ripe plums, pitted and quartered
  • 1 1/2 cups water
  • 1 to 1 1/2 cups granulated sugar, to taste
  • 45 cardamom pods, lightly crushed or 1 teaspoon ground cardamom
  • 2 tablespoons fresh lemon juice

Instructions

  1. Combine water, sugar, and cardamom in a saucepan. Bring to a boil, then simmer for 5 minutes to infuse. Cool slightly and strain if using whole pods.
  2. Blend the plums into a smooth puree. For a smoother texture, strain the puree through a fine mesh sieve.
  3. Mix the plum puree with the cardamom syrup and lemon juice. Chill the mixture in the refrigerator for 2–3 hours.
  4. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  5. Transfer the sorbet to a container and freeze for an additional 2–3 hours or until firm.

Notes

  • Adjust sugar based on the sweetness of your plums.
  • Straining the plum puree removes skins and yields a smoother sorbet.
  • For stronger cardamom flavor, steep longer or use ground cardamom directly.
