This Cajun Mac and Cheese combines creamy, cheesy goodness with a spicy Cajun twist. Pasta & Meat
- 2 and 1/2 cups uncooked elbow noodle pasta
- 6 andouille sausages, diced
Vegetables & Seasonings
- 1 red pepper, diced
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1 tablespoon Cajun seasoning
- Smoked paprika, for topping
Cheese Sauce
- 2 8oz blocks of white Cheddar cheese, grated (about 4 cups)
- 2 tablespoons butter
- 1 tablespoon all-purpose flour
- 1 and 1/2 cups milk
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow noodles and cook according to package instructions until al dente. Drain and set aside.
- Sauté Peppers and Sausage: While the pasta cooks, heat olive oil in a skillet over medium heat. Add diced red pepper and andouille sausage. Sauté until the peppers are tender and sausage is slightly browned, about 5-7 minutes. Remove from heat.
- Make the Cheese Sauce: In a saucepan, melt the butter over medium heat. Stir in the flour and salt to form a roux and cook for 1-2 minutes until it bubbles but does not brown. Gradually whisk in the milk and continue stirring until the mixture thickens and coats the back of a spoon.
- Add Cheese and Seasoning: Remove the sauce from heat and stir in 4 cups of grated white Cheddar cheese until melted and smooth. Add Cajun seasoning and mix well.
- Combine Ingredients: In a large bowl, combine the cooked pasta, sautéed peppers and sausage, and cheese sauce. Mix until evenly combined.
- Bake the Mac and Cheese: Preheat your oven to 350°F (175°C). Transfer the mixture into a greased baking dish. Sprinkle additional grated cheese on top and dust with smoked paprika. Bake for 20-25 minutes, or until the top is golden and bubbly.
Notes
- You can adjust the Cajun seasoning to your heat preference.
- Use white Cheddar for a sharper taste, or substitute with mild Cheddar if preferred.
- For a creamier texture, add a splash of cream or more milk to the cheese sauce.
- Make sure not to overcook the pasta initially as it will continue to cook in the oven.
- If you like a crispy top, broil the mac and cheese for the last 2-3 minutes, watching carefully to avoid burning.
