Description

This Broccoli Cheese Pasta Dinner is a quick, delicious, and nutritious weeknight meal featuring tender pasta, vibrant broccoli, and a creamy cheese sauce. It’s a comforting dish that delights both kids and adults while sneaking in some healthy veggies. Perfect for busy evenings and easily customizable with added proteins or different cheeses.

Ingredients

Scale

For the Pasta and Vegetables

  • 8 ounces pasta (such as penne or rotini)
  • 2 cups fresh broccoli florets
  • Salt, to taste

For the Cheese Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 ½ cups milk
  • 1 ½ cups shredded cheddar cheese
  • Salt and pepper, to taste

Instructions

  1. Cook the Pasta and Broccoli: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. During the last 3 minutes of cooking, add the broccoli florets to the pasta water to blanch them. Drain the pasta and broccoli and set aside.
  2. Prepare the Cheese Sauce: In the same pot, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until the mixture turns a light golden color, forming a roux. Gradually whisk in the milk, continuing to stir until the sauce thickens and bubbles gently.
  3. Add Cheese and Season: Reduce heat to low and stir in the shredded cheddar cheese until melted and smooth. Season the sauce with salt and pepper to taste.
  4. Combine and Serve: Return the cooked pasta and broccoli to the pot with the cheese sauce. Toss well to coat everything evenly. Serve immediately, optionally paired with a side salad or garlic bread.

Notes

  • Use sharp cheddar cheese for a bolder flavor.
  • For a protein boost, add grilled chicken or sautéed shrimp.
  • Substitute milk with a dairy-free alternative to make it lactose-free.
  • Leftovers can be stored in the refrigerator for up to 3 days.
  • Reheat gently on the stovetop or microwave, adding a splash of milk if sauce thickens too much.
