Description

Breakfast Pancake Poppers are delightful bite-sized pancake balls filled with sweet or savory ingredients, making them perfect for busy mornings or brunches. These fluffy and golden poppers are customizable with mix-ins like fruit, chocolate chips, sausage, or cheese, and are served best warm with syrup or jam for dipping.

Ingredients

Scale

Batter Ingredients

  • 1 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¾ cup buttermilk
  • 1 large egg
  • 2 tbsp melted butter (plus more for greasing)
  • ½ tsp vanilla extract

Optional Fillings

  • mini chocolate chips
  • blueberries
  • diced strawberries
  • cooked sausage bits
  • cream cheese cubes
  • shredded cheese

Instructions

  1. Mix Dry Ingredients: In a mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until evenly combined.
  2. Mix Wet Ingredients: In a separate bowl, whisk the buttermilk, large egg, melted butter, and vanilla extract until smooth.
  3. Combine Batter: Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix to maintain fluffy texture.
  4. Preheat Cooking Equipment: Preheat your cake pop maker, mini muffin tin, or aebleskiver pan over medium heat. Lightly grease the wells with butter to prevent sticking.
  5. Assemble Poppers: Spoon about 1 tablespoon of batter into each well. Add a small amount of your chosen filling (such as chocolate chips, blueberries, or sausage bits) to the center, then cover with a little more batter to seal the filling inside.
  6. Cook: Cook the poppers for 3–4 minutes if using a cake pop maker or aebleskiver pan, or bake at 375°F (190°C) in the oven using a mini muffin tin for 10–12 minutes. Poppers are done when golden brown and a toothpick inserted comes out clean.
  7. Serve: Serve the pancake poppers warm, accompanied by maple syrup, jam, or dusted lightly with powdered sugar for added sweetness.

Notes

  • To freeze, allow poppers to cool completely, then place them in an airtight container. Reheat in the microwave or toaster oven when ready to enjoy.
  • If not using butter for greasing, non-stick spray can be used for easier release.
  • Try a savory twist by adding cheese and herbs to the filling for a flavorful variation.
