Description

These Breaded Chicken Skewers are a delicious and kid-friendly main course featuring tender chicken chunks coated in a flavorful breadcrumb and Parmesan mixture, baked to golden perfection. Perfect for a quick weeknight dinner or a casual get-together, they pair wonderfully with a variety of dipping sauces.

Ingredients

Scale

Chicken and Skewers

  • 1 ½ pounds boneless, skinless chicken breasts, cut into 1 ½-inch chunks
  • Wooden or metal skewers
  • Cooking spray or olive oil for baking

Breading Mixture

  • 1 cup plain breadcrumbs or panko
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Egg Wash

  • 2 large eggs
  • 2 tablespoons milk

Instructions

  1. Prepare the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during cooking.
  2. Preheat the Oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil for easy cleanup.
  3. Mix the Breading: In a shallow bowl, combine the breadcrumbs, grated Parmesan, garlic powder, paprika, salt, and black pepper.
  4. Prepare the Egg Wash: In a separate bowl, whisk together the eggs and milk until well blended.
  5. Coat the Chicken: Dip each chicken chunk first into the egg mixture, then roll it in the breadcrumb mixture, pressing gently to help the coating stick well.
  6. Assemble the Skewers: Thread 4 to 5 coated chicken pieces onto each skewer, making sure they are evenly spaced.
  7. Prepare for Baking: Place the assembled skewers on the prepared baking sheet and lightly coat them with cooking spray or drizzle with a little olive oil to help the breading crisp up.
  8. Bake: Bake the skewers in the preheated oven for 20 to 25 minutes, turning them halfway through cooking until the chicken is golden brown and cooked through.
  9. Serve: Remove from oven and serve the skewers hot with your favorite dipping sauces like honey mustard, ranch, or BBQ sauce.

Notes

  • These skewers can also be cooked in an air fryer at 380°F for 12 to 15 minutes for a quicker alternative.
  • Serve with honey mustard, ranch, or BBQ sauce to enhance the flavor.
  • For extra tenderness and flavor, marinate the chicken in buttermilk or Italian dressing before breading.
