Ingredients
Scale
Chicken and Skewers
- 1 ½ pounds boneless, skinless chicken breasts, cut into 1 ½-inch chunks
- Wooden or metal skewers
- Cooking spray or olive oil for baking
Breading Mixture
- 1 cup plain breadcrumbs or panko
- ½ cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
Egg Wash
- 2 large eggs
- 2 tablespoons milk
Instructions
- Prepare the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during cooking.
- Preheat the Oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil for easy cleanup.
- Mix the Breading: In a shallow bowl, combine the breadcrumbs, grated Parmesan, garlic powder, paprika, salt, and black pepper.
- Prepare the Egg Wash: In a separate bowl, whisk together the eggs and milk until well blended.
- Coat the Chicken: Dip each chicken chunk first into the egg mixture, then roll it in the breadcrumb mixture, pressing gently to help the coating stick well.
- Assemble the Skewers: Thread 4 to 5 coated chicken pieces onto each skewer, making sure they are evenly spaced.
- Prepare for Baking: Place the assembled skewers on the prepared baking sheet and lightly coat them with cooking spray or drizzle with a little olive oil to help the breading crisp up.
- Bake: Bake the skewers in the preheated oven for 20 to 25 minutes, turning them halfway through cooking until the chicken is golden brown and cooked through.
- Serve: Remove from oven and serve the skewers hot with your favorite dipping sauces like honey mustard, ranch, or BBQ sauce.
Notes
- These skewers can also be cooked in an air fryer at 380°F for 12 to 15 minutes for a quicker alternative.
- Serve with honey mustard, ranch, or BBQ sauce to enhance the flavor.
- For extra tenderness and flavor, marinate the chicken in buttermilk or Italian dressing before breading.
