- 1 medium green cabbage, cored and sliced
- 1 tablespoon olive oil or butter
- 1 small onion, thinly sliced
- 2 cloves garlic, minced
- 1/2 cup vegetable or chicken broth
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon sugar (optional, to balance acidity)
Instructions
- Heat olive oil or butter in a large skillet or Dutch oven over medium heat.
- Add the onion and cook for 3–4 minutes until softened. Stir in the garlic and cook for another 30 seconds.
- Add the cabbage and sauté for 5 minutes, stirring occasionally, until it begins to wilt.
- Pour in the broth, vinegar, salt, pepper, and sugar (if using). Stir to combine.
- Cover, reduce heat to low, and simmer for 20–25 minutes until the cabbage is tender, stirring occasionally.
- Uncover and cook for another 5 minutes to reduce any excess liquid. Adjust seasoning to taste and serve warm.
Notes
- Red cabbage can be used instead of green for a deeper color and flavor.
- For extra richness, add a pat of butter before serving.
- Add crumbled bacon or smoked sausage for a heartier dish.
- Great as a side for pork, chicken, or roasted potatoes.
