Ingredients
Scale
For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
For the ganache filling:
- 8 oz semi-sweet or dark chocolate, chopped
- 1/2 cup heavy cream
- 1 tablespoon unsalted butter
- 1/2 teaspoon vanilla extract
For the topping:
- 1 1/2 cups fresh blueberries
- 1 tablespoon blueberry jam (optional, for glaze)
- Fresh mint (optional, for garnish)
Instructions
- Prepare the crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter until the mixture is evenly blended. Firmly press the mixture into the bottom and up the sides of a 9-inch tart pan with a removable bottom to form an even crust. Bake for 8 to 10 minutes, or until the crust turns lightly golden. Remove from oven and let it cool completely.
- Make the ganache filling: While the crust is cooling, pour the heavy cream into a small saucepan and heat over medium heat just until it starts to simmer. Remove from heat immediately and pour the hot cream over the chopped chocolate placed in a heatproof bowl. Allow it to sit undisturbed for 2 minutes to soften the chocolate. Stir gently until the mixture becomes smooth and glossy. Incorporate the unsalted butter and vanilla extract, stirring well to combine.
- Assemble the tart: Pour the prepared ganache filling evenly into the completely cooled crust. Use a spatula to smooth out the top surface carefully. Place the tart in the refrigerator and chill for 1 to 2 hours, or until the ganache is fully set and firm.
- Add the topping: Once the ganache has set, arrange fresh blueberries evenly over the top. If desired, warm the blueberry jam slightly until it becomes brushable, then lightly brush it over the berries to create a shiny glaze. Garnish with fresh mint leaves for a pop of color and freshness.
- Serve: Slice the tart into 8 servings and serve chilled for the best texture and flavor experience.
Notes
- For a richer, more chocolate-forward crust, substitute chocolate wafer cookies instead of graham crackers.
- This tart is best served chilled and can be prepared a day in advance for convenience.
- If using frozen blueberries, make sure they are fully thawed and well-drained to avoid sogginess in the topping.
