Sugar Cookie Crust:
- 1 (16 oz) tube refrigerated sugar cookie dough
Cream Cheese Layer:
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
Blueberry Topping:
- 1 cup fresh blueberries
- 1/4 cup blueberry jam or preserves
- 1 teaspoon lemon zest
Instructions
- Preheat the Oven: Preheat oven to 350°F (175°C).
- Prepare the Crust: Press the sugar cookie dough into a greased 12-inch pizza pan and bake for 12–14 minutes until golden.
- Make the Cream Cheese Layer: Beat cream cheese, powdered sugar, and vanilla until smooth. Spread over cooled crust.
- Prepare the Blueberry Topping: Mix blueberry jam with lemon zest, then fold in fresh blueberries. Spread over cream cheese layer.
- Chill and Serve: Chill in the refrigerator for at least 30 minutes before slicing and serving.
Notes
- You can substitute other berries or use mixed berry preserves.
- For a firmer base, bake the cookie crust a couple of extra minutes and allow to cool completely before topping.
