			Blackberry Sauce
- 1 quart fresh or frozen blackberries, rinsed
- 1 cup water
- 1 cup sugar
- ½ teaspoon salt
- ½ teaspoon lemon extract
Dumplings
- 1½ cups flour
- 2 teaspoons baking powder
- 1 tablespoon sugar
- ¼ teaspoon salt
- ¼ teaspoon nutmeg
- â…” cup milk
Instructions
- Prepare the blackberry sauce: In a large, wide saucepan, combine the blackberries, water, 1 cup sugar, ¼ teaspoon salt, and lemon extract. Bring the mixture to a boil over medium heat to begin extracting the berry juice and dissolve the sugar.
- Simmer the berries: Once boiling, reduce the heat and let the mixture simmer for 5 minutes. This softens the blackberries and enhances the flavors of the sauce.
- Make the dumpling batter: In a separate bowl, mix together the flour, baking powder, 1 tablespoon sugar, ¼ teaspoon salt, nutmeg, and milk until just combined. Avoid overmixing to keep the dumplings light and tender.
- Drop dumplings into sauce: Using a tablespoon, drop spoonfuls of the dumpling batter into the simmering blackberry mixture. Do this carefully to maintain the shape of the dumplings.
- Cook the dumplings: Cover the saucepan tightly with a lid and allow the dumplings to simmer for 15 minutes without lifting the lid. This steam cooking will cook the dumplings thoroughly and keep them fluffy.
- Serve: Spoon hot dumplings and blackberry sauce into bowls. Serve immediately, preferably with vanilla ice cream or fresh whipped cream for a rich and creamy finish.
Notes
- Ensure the lid remains closed while simmering dumplings to avoid losing steam and uneven cooking.
- Fresh blackberries provide the best flavor, but frozen berries work well when out of season.
- If you prefer a less sweet dish, reduce the sugar slightly.
- For a citrusy punch, try substituting lemon extract with orange extract.
- Serve dumplings immediately as they are best enjoyed warm and fresh.
