Description

These Black Bean Tacos are hearty, flavorful, and perfect for a quick meatless meal. Seasoned black beans are tucked into warm tortillas and topped with fresh veggies, creamy avocado, and your favorite taco toppings. They’re healthy, customizable, and ready in under 20 minutes!


Ingredients

For the Black Bean Filling:

  • 1 tablespoon olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 (15 oz) can black beans, drained and rinsed

  • 1 teaspoon chili powder

  • 1/2 teaspoon cumin

  • 1/4 teaspoon smoked paprika

  • Salt and black pepper, to taste

  • 2 tablespoons water or vegetable broth

  • Juice of 1/2 lime

For Serving:

 

  • 8 small corn or flour tortillas

  • 1 avocado, sliced or mashed

  • 1/2 cup diced tomatoes or pico de gallo

  • 1/4 cup crumbled feta or cotija cheese (optional)

  • 1/4 cup chopped fresh cilantro

  • Lime wedges

  • Hot sauce or salsa (optional)


Instructions

  • Heat olive oil in a skillet over medium heat. Add onion and sauté for 3–4 minutes until softened.

  • Add garlic and cook for 30 seconds until fragrant.

  • Stir in black beans, chili powder, cumin, smoked paprika, salt, and pepper. Add water or broth and cook for 4–5 minutes, mashing some of the beans slightly for a creamier texture.

  • Squeeze in lime juice, stir, and remove from heat.

  • Warm tortillas in a skillet or microwave until soft and pliable.

  • Assemble tacos by spooning the black bean mixture into each tortilla. Top with avocado, tomatoes, cheese, cilantro, and any extras you like.

 

  • Serve with lime wedges and hot sauce, and enjoy!


Notes

  • Add sautéed bell peppers or corn for extra flavor and texture.

  • Want it spicier? Toss in a diced jalapeño or chipotle in adobo to the beans.

  • For a vegan version, skip the cheese or use a dairy-free alternative.
