Bison Brisket and Seasonings

- 1 (13 oz) bag tortilla chips
- 2 cups shredded Monterey Jack or cheddar cheese
- 1 cup canned black beans, drained and rinsed
- ½ cup diced red onion
- 1 jalapeño, sliced

- 1 cup diced tomatoes or pico de gallo
- ½ cup sour cream
- ¼ cup chopped fresh cilantro
- Lime wedges for serving

Instructions
- Preheat and Sauté Brisket: Preheat your oven to 400°F. In a skillet over medium heat, warm the olive oil. Add the shredded bison brisket, then season with chili powder, cumin, smoked paprika, salt, and pepper. Stir frequently and cook for 3–4 minutes until the meat is heated through and well coated with the spices.
- Assemble Nachos: On a large baking sheet or an oven-safe platter, spread the tortilla chips evenly in a single layer. Sprinkle half of the shredded cheese over the chips. Evenly distribute the spiced brisket, black beans, diced red onion, and jalapeño slices on top of the cheese layer. Finish with the remaining cheese sprinkled evenly over all the toppings.
- Bake Nachos: Place the assembled nachos in the preheated oven. Bake for 8–10 minutes or until the cheese has melted completely and is bubbly and slightly golden.
- Add Fresh Toppings and Serve: Remove the nachos from the oven and immediately top with diced tomatoes or pico de gallo, dollops of sour cream, and chopped fresh cilantro. Garnish with lime wedges and optionally add pickled red onions or avocado slices. Serve the nachos hot for the best flavor and texture.
