- 2 apples (such as Fuji or Granny Smith), chopped
- 1 cup seedless red or green grapes, halved
- 1/2 cup celery, finely sliced
- 1/2 cup walnuts, chopped and toasted
- 1/4 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 1 tbsp lemon juice
- 1/2 tsp honey (optional)
- Salt and pepper to taste
- 2 tbsp chopped fresh parsley (optional)
Instructions
- In a small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, honey (if using), salt, and pepper to make the dressing.
- In a large mixing bowl, combine apples, grapes, celery, and walnuts.
- Pour the dressing over the fruit and vegetables and mix until evenly coated.
- Garnish with parsley if desired, and serve immediately or chill for 30 minutes for best flavor.
Notes
- To prevent apples from browning, toss them with a little lemon juice before adding.
- Use yogurt only for a lighter version, or mayo only for a richer one.
- Add chopped cooked chicken to turn it into a protein-packed meal.
